Serves 10 servings

To make the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (produces 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Instructions

To prepare the Syrup: Put all the components inside a pan, heat until it reaches a simmer, stirring until the sugar dissolves. After that, take off the stove and leave to reach room temperature entirely. Decant into a clean bottle, close it keeping it chilled, where it will keep for about one month.

For the Premix: Mix all the liquids into one large bottle, leave to sit for one hour, then strain , ideally through muslin, so it's completely strained.

For serving: Pour 85ml of your batch mix into a cocktail shaker containing ice, gently stirring carefully for a minute until cold. Pour to a chilled martini glass or a similar vessel, top with the cranberries and complete it with a quick spritz with the mandarin essence over the drink.
